{"id":291,"date":"2023-09-22T07:12:04","date_gmt":"2023-09-22T07:12:04","guid":{"rendered":"https:\/\/blog.ellofood.it\/?p=291"},"modified":"2023-09-22T07:24:02","modified_gmt":"2023-09-22T07:24:02","slug":"pasta-alluovo-a-4-mani","status":"publish","type":"post","link":"https:\/\/blog.ellofood.it\/index.php\/2023\/09\/22\/pasta-alluovo-a-4-mani\/","title":{"rendered":"Pasta all&#8217;uovo a 4 mani"},"content":{"rendered":"\n<p>13 Marzo &#8211; <br>Il corso verr\u00e0 suddiviso in due parti ovvero:<br>una parte sar\u00e0 interamente realizzata con il maestro pastaio e sfoglino Roberto Tulliani, il quale far\u00e0 vedere le tecniche di impasto e stesura della pasta fresca all&#8217;uovo in metodo tradizionale di prodotti ripieni come tortelli, tortellini, ravioli, fagottini e tagliati a mano come pappardella, fettuccine e tonnarelli.<br>Nella seconda parte lo chef Marco De Vita vi mostrer\u00e0 come realizzare la pasta fresca all&#8217;uovo con i macchinari trafilati e ripieni. <br>Verr\u00e0 trattato il segmento merceologico delle semole e le farine e del loro pi\u00f9 appropriato uso con le tecniche di bilanciamento, per ottenere diverse strutture per la miglior tenuta in cottura ed un miglior assorbimento delle salse o della risottatura.<br><br>Saranno trattati anche argomenti inerenti alla catena del freddo. L&#8217;importanza della conservazione ideale dei prodotti di pasta fresca.
